Chilli Zucchini Noodles

Because it wouldn’t be a low carb meal without zucchini, right? I’m not gonna lie I rarely eat low carb, but when I do I make sure it’s zucchini noodles! They’re super easy to make and the perfect go to meal for when you can’t be fucked to inject insulin. 



You’ll need:

  • 3x Zucchini

  • 3 tbsp Olive oil + more to top

  • 1/2 cup parmesan cheese + more to top

  • 1 clove of garlic

  • 1 tsp chilli flakes (add more or less depending on personal preference) 

  • a handful of basil for topping

  • Optional toppings: Chopped tomatoes and roasted pine nuts 


  1. Wash, top and tail zucchini’s and spiral zucchini’s using a spiraler (obvs) and dice the garlic clove.

  2. Heat a fry pan on low and add the olive oil. When the oil begins to bubble add the zucchini and garlic and toss for 6 minutes (I use tongs for this, it makes it easier to toss).

  3. Sprinkle the chilli flakes and cheese into the pan and toss for 1 minute. 

  4. Place the zucchini into a bowl and drizzle with a little olive oil, sprinkle with parmesan, basil and suggested toppings.
